Aluat:

  • 250 g faina
  • 2 linguri zahar
  • 1/4 lingurita sare
  • 110 g unt rece taiat cubulete
  • 70 g grasime vegetala (pentru fetele din America shortening) sau untura rece
  • cca 120 ml apa foarte rece (cat sa se lege aluatul)

Intr-un bol se pune faina, zaharul si sarea si se amesteca sa se combine.

Se adauga untul si untura si lucrand repede si cat mai putin cu mainile, imbracati bucatelele de unt si untura in faina pana ce se obtine ceva ca nisipul.

Treptat de adauga apa rece si se amesteca pana ce se desprinde de peretii vasului, chiar daca inca nu este adunat bine.

Se pune aluatul intr-o folie de plastic si se da la rece timp de 30 min pana la 1 ora.

Intre timp se pregateste umplutura:

  • 8 mere mari
  • zahar (in functie de cat de dulci sunt merele)
  • 1/2 lingurita scortisoara
  • 1 vf cutit nucsoara
  • 100-200 g biscuiti simpli zdrobiti (facuti praf)

 Merele se curata, se razuiesc si se storc de suc (nu complet insa). Se pun pe foc impreuna cu zaharul si se fierb pana ce se evapora sucul. Se ia de pe foc, se adauga scortisoara si nucsoara si o parte din biscuiti.

Intr-o tava de tarta (preferabil cu baza detasabila) se intinde o foaie de aluat inclusiv pe margini, lasand deoparte 1/3 din aluat.

Deasupra blatului se pune un strat de “praf”de biscuiti si apoi merele apasand usor cu o lingura. Peste mere se face un grilaj din aluatul ramas, se unge cu ou si se da la cuptor timp de 20-30 minute pana ce aluatul este auriu.
